Fathead Pizza!


In the long time that I have been eating Low Carb and searching the internet for recipes, I have seen the name fathead come by a lot, but never quite knew what it was.

Until today. I found a recipe for a fathead pizza base, made with cheese and almond flour, and it turned out great!!

Here’s the recipe:

170 grams of grated cheese, mozzarella or gouda;

85 grams of almond flour

1 egg

2 T creamcheese


First melt the cheeses in the microwave and stir well. After that add the almond flour and the egg and mix well again.

Put the mixture (with some herbs, garlic, salt/pepper) on a baking tray with a baking sheet at flatten it. Bake at 220C for 12-15 minutes, turn over and bake for another 5-10 minutes.

This is your pizza base. You can put just about anything you want on this pizza, just bake it for another 5-10 minutes and then your pizza is ready!


Halloumi – Cypriotic Cheese


I am crazy about cheese. That is one of the reasons why eating keto or low carb works so well for me. I wouldn’t want to miss cheese in my diet. I eat just about every type of cheese. One of these cheeses is Halloumi.

Halloumi is a¬†Cypriot semi-hard, cheese made from a mixture of goat’s and sheep’s milk, and sometimes also cow’s milk.It has a high melting point and so can easily be¬†friend or grilled.

Halloumi is served fried with vegetables, or as an ingredient in salads. Cypriots like eating halloumi with watermelon in the warm months.

Halloumi has almost no carbs, just 1,8 grams per 100 grams.

Recipe: Creamy Watercress soup



This is one of my favorite soups. The recipe is from the website of Holland’s biggest Supermarket, called Albert Heijn. A supermarket I used to work at in my late teens! And what a great time that was!

Ingredients for 4 persons:

1 packet of watercress, about 100 grams

4 large tomatoes

300 grams of cream cheese

3 sjalots

2 tablets of vegetable stock

3 tbsp of butter

6 tbs of tomato tapenade

8 slices of wholewheat bread


How to make the soup:

Fry the finely sliced sjalots (echalots) with the butter. Make a broth with the vegetable stock tablets and 800 ml of water.

After the sjalots are baked, add the watercress. Keep a few leefs apart for decoration later.

Add a little of the broth and put this mixture in a blender and make it a smooth substance.

Put the mixture back in the rest of the broth and add the diced creamcheese. Stirr untill the creamcheese is entirely dissolved.

Put the slices of bread in a toaster, cut the pieces into triangles and put the tapenade and sliced tomatoes on the sandwiches.



Cannelloni with beef, ricotta and spinach – Recipe


Last week we had dinner with our neighbours, whom we get along with quite well!
For this occasion I decided to make an italian dish; Canneloni!

The ingredients I used:
20 canneloni
400 gr minced beef
500 gr spinach
250 gr ricotta
Herbs (paprika, salt, pepper, oregano)
1 or 2 cloves of garlic
Two cans of tomatoes
2 onions
Grated cheese

First make the tomato sauce by baking the onions, 1 clove of garlic and after that adding the tomatoes. Put the mixutre in a blender to make it a smooth sauce.

Than bake the minced meat with the other clove of garlic; mix this with this (defrosted) spinach and the ricotta. Add salt and pepper to taste.

Fill the canneloni with the spinach/meet/ricotta mixture. I used a piping bag which worked very well!

Put the filled canneloni in a big dish and cover all the canneloni with the tomato sauce. Finally, sprinkle a layer of grated cheese on top and bake in a preheated oven on 200 degrees celcius.

The result was appreciated!





Tomato and beef casserole with a “roof” of potato and pesto


This is one if those recipes that I make when I feel like eating something warm and comforting. Another winner! It is savory, but also a little sweet, it is creamy and cheesy, everything I like! And too bad these dishes always come with heaps of calories, but well, you only live once they say!

400 gr of minced beef
250 gr of bacon, diced into small pieces
400 grams of potatoes, precooked and in slices
2 cans of tomatoes
Sundried to atoes, about 5, sliced
Cream, about 150 ml
Grated cheese, about 150 grams
Green pesto, about 3 tbs.

First fry the bacon and the minced beef. Then add the tomatoes, sundried tomatoes, a teaspoon of thyme, pepper, salted and a splash of cream. Let this simmer for about 15 minutes.

Pour this mixture in a 20 x 30 casserole, then lay the potato slices on top like the tiles of a roof. After that, mix the rest of the cream with the green pesto and spread this on top of the potatoes.

Finish this of with a layer of grated cheese.

In a preheated oven, 180 degrees. For about 30 minutes, and done!!



Tip for a Recipe: Broccoli and Gruy√®re Pie


This pie I have made lot’s of time already, for a number of years now. Ideal to make in advance when you don’t have time on the day you want to eat it.

You can eat this pie as a main course with a nice salad, as a side dish, or a small piece as a snack on f.e. a birthday getogether.

And…!! Kids like this pie, eventhough it contains quite a lot of veggies!!

Anyway, you should really give making this pie a try. Success guaranteed!

What do you need: Quite a lot of Broccoli in small ‘roses’, grated Gruyere cheese, bacon pieces (or ham), eggs, salt, pepper. This makes more of a quiche. If you want a firmer, pie-like version, just add some flour. What also tastes very nice in this pie, is a splash of white wine!!

In the oven at 180 degrees for about 30 minutes and done!

All time favorite: tomato and ground beef dish with potatoe and pesto – recipe


Ever since I having been living on my own (1990!), I have been cooking and baking stuff. The first few years I did ‘t have an oven, but when I finally got one, a whole new world opened itself to me!

And boy do I love melted cheese and baked cheese!

One of my all time favorite dishes is the “Tomaten-gehaktschotel met aardappel-pestodakje”. In Dutch…

In English it is something like a ground beef and tomato roast topped with potato, pesto and cheese.

First of all you start with baking the beef (minced meet), and some bacon pieces. Then you add some sundried tomatoes, cut in to lieces, and two cans of tomatoes. Then a splash of cream and this goes into an oven dish.

On top of that you put potatoes that are cut into flat pieces, overlapping likethe roof of a house. On top of the potatoes you sprinkle some cream that is mixed with a few tablespoons of pesto. And finishing touch: lots of grated cheese!

45 minutes in a preheated oven of 180c and done!
