I am crazy about cheese. That is one of the reasons why eating keto or low carb works so well for me. I wouldn’t want to miss cheese in my diet. I eat just about every type of cheese. One of these cheeses is Halloumi.
Halloumi is a Cypriot semi-hard, cheese made from a mixture of goat’s and sheep’s milk, and sometimes also cow’s milk.It has a high melting point and so can easily be friend or grilled.
Halloumi is served fried with vegetables, or as an ingredient in salads. Cypriots like eating halloumi with watermelon in the warm months.
Halloumi has almost no carbs, just 1,8 grams per 100 grams.
This is what Halloumi usually looks like:
I have made lots of salads using Halloumi as a source of fat and protein. See photo’s beneath:
What’s not to like… this creamy Cauliflower soup fills you up entirely with only 450 calories and just 4,9 grams of carbs…
Ingredients for 4 servings:
375 grams of cauliflower
800 ml chickenstock
200 grams of creamcheese
1/8 teaspoon Xanthangum
8 pieces of fried bacon
200 grams of cheddar cheese
4 spring onions
I make my soup in the Crockpot, in the morning I throw in the cauliflower, stock and cream cheese, after a few hours I put everything in the blender, add 1/8 teaspoon of Xanthangum and the soup is ready. Sprinkle the grated cheddar, bacon and sliced spring onion on top and… let’s eat!
A very inventive way to eat lunch without needing bread or a bun, is by making a so called. Unwich. A sandwich, but without the bread. Take some big leaves of lettuce and put anything you like in between, and there you have it! I have Always seen bread as a necessary means to transport what’s on it, so I like it!
Here are some nice ideas I will sure give a try soon!! Good to keep around with the Holidays coming up! I found this and so much other great ideas on Pinterest. Pinterest is a never ending source of ideas, what a fantastic invention this is!!
